French Apricot & Almond Tart

This apricot and almond tart is sweet, slightly tangy and wonderfully simple.

Ingredients
  

  • 1 sheet shortcrust pastry
  • 8 –10 ripe apricots
  • 100 g ground almonds
  • 80 g softened butter
  • 80 g sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp flour
  • 2 tbsp sliced almonds
  • Icing sugar optional

Method
 

Prepare the tart
  1. Preheat the oven to 180°C.
  2. Line a 24 cm tart tin with the pastry.
  3. Prick the bottom gently with a fork and refrigerate while preparing the filling.
Make the almond cream
  1. Beat the softened butter and sugar until creamy.
  2. Add the eggs one at a time.
  3. Stir in the ground almonds, flour and vanilla until combined.
Add the apricots
  1. Spread the almond mixture evenly over the pastry.
  2. Cut the apricots in half and remove the stones.
  3. Arrange the apricot halves over the almond filling, cut side facing upwards.
  4. Scatter sliced almonds over the top.
Bake
  1. Bake for approximately 35–40 minutes, until the almond filling is golden and the apricots are soft and slightly caramelised.
  2. Allow the tart to cool before removing it from the tin.
  3. Dust lightly with icing sugar if you like.

Notes

Don't worry if your apricots are slightly tart.
That's actually what makes this dessert so good. The acidity of the fruit balances the sweet almond filling beautifully.
