Vegetarian Banh Xeo Chay Recipe

Ingredients
  

For the bánh xèo batter
  • 200 g rice flour
  • 1 tbsp corn starch
  • ½ tsp turmeric powder
  • 250 ml coconut milk
  • 250-300 ml cold water
  • ½ tsp salt
  • 2 spring onions finely sliced
For the vegetarian filling
  • 200 g mushrooms sliced
  • 1 carrot julienned
  • 150 g bean sprouts
  • 1 small onion thinly sliced
  • 1-2 tbsp vegetable oil
  • A pinch of salt
  • Black pepper to taste
To serve
  • Lettuce leaves
  • Fresh mint
  • Vietnamese herbs if available
  • Cucumber thinly sliced
  • Fresh coriander
  • Lime wedges
Easy Vegetarian Dipping Sauce
  • 2 tbsp lime juice
  • 2 tbsp water
  • 1 tbsp sugar
  • 1 tbsp soy sauce
  • ½ tbsp rice vinegar
  • Finely chopped chilli optional
  • A little grated carrot optional

Method
 

Prepare the batter
  1. Whisk the rice flour, corn starch, turmeric and salt together.
  2. Gradually add the coconut milk and water, whisking until smooth.
  3. Stir in the sliced spring onions.
  4. Let the batter rest for around 20–30 minutes.
  5. A short resting time helps the flour hydrate and gives you a smoother batter.
Prepare the filling
  1. Heat a little vegetable oil in a pan.
  2. Add the onion and mushrooms and cook until the mushrooms are tender and lightly browned.
  3. Add the carrot and cook briefly.
  4. Finally, add the bean sprouts and cook for another minute or so.
  5. You want the vegetables cooked but still fresh and slightly crunchy.
  6. Set aside.
Get the pan really hot
  1. This is one of the most important steps.
  2. Use a non-stick or well-seasoned pan and heat it over medium-high heat.
  3. Add a small amount of oil.
  4. Pour in a thin layer of batter and quickly tilt the pan so the batter spreads around the entire surface.
  5. You should hear that lovely “xèo!” sound.
  6. That's the moment you know things are going in the right direction.
Make it crispy
  1. Add some of the mushroom and vegetable filling to one side of the pancake.
  2. Cover the pan briefly with a lid to help the filling cook.
  3. Then remove the lid and continue cooking until the bottom becomes golden and crisp.
  4. Don't rush this part.
  5. A slightly longer cooking time over the right heat gives you those wonderfully crisp edges.
  6. Fold the pancake in half and transfer it to a plate.
  7. Repeat with the remaining batter and filling.
Easy Vegetarian Dipping Sauce
  1. Stir until the sugar dissolves.
  2. Taste and adjust the balance to your liking.
  3. Vietnamese dipping sauces are wonderfully flexible. You may prefer yours more sour, sweeter or saltier.
